Our new bread oven imported from the UK arrives tomorrow, exciting times! This can be an intimidating piece of equipment to get started with, so I wanted to link an in-depth tutorial, from Maurizio Leo of The Perfect Loaf, on this specific oven. He has a very thorough instructions and best layouts for various loaf sizes. Check it out HERE!

Other updates to the kitchen this week include two nearly new Moffat turbofan ovens like our current double stack. We will be doing away with the single Moffat and single proofing cabinet as we have the tall hot hold/proofer and that should suffice for our needs.
